STEAK IN SAUCE

This dish is handwritten in my 1970's recipe scrapbook, so I've been cooking it for many years.  It's easy to make, and will have you out of the kitchen in no time.

Ingredients:

  • 1 pnd., more or less, depending on how many people you are serving, of  top of the round steak
  • 1 tblsp. butter
  • 1 cup of ketchup
  • 1 cup of water
  • 1 capful of Worcestershire sauce
  • A couple of dashes of hot pepper sauce
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • Salt and pepper to taste

Preparation:

Brown the steak in the butter, and remove from pan.  Add all other ingredients to the pan, and simmer for about ten minutes.  While the above mixture is simmering, cut the steak into bite size pieces, and then add to the mixture in the pan.  Simmer for twenty minutes, then serve with side dishes.

Tips:

Mashed potatoes is delicious with steak in sauce. Peas would go well with this in additon to the potatoes A nice salad would round off the meal

PRIME RIB ROAST


Prime rib is one of my favorite cuts of beef.  I cooked it often for Christmas dinners.   I enchance its natural flavor with plenty of fresh garlic and onion, and sometimes dot the top with dots of butter.

Ingredients:

  • Prime rib (amount of ribs depends on how many people you are serving
  • 5 or 6 cloves of garlic
  • 1 large onion
  • two or three baby potatoes per person, and 1 carrot per person, cut up in chunks

Preparation:

Thoroughly wash the rib roast and place on a rack in a baking pan.  Cut one of the cloves of garlic in half, and rub it all over the outside of the roast.  Then cut up the garlic, and make small pockets all over the roast to insert pieces of garlic inside.  Now cut up the onion and place the slices all over the roast.  Dot top of the roast with small dots of butter if you'd like.

Partially pare the potatoes, (I like to leave at leased some of the scrubbed peal on the potatoe for added fiber.  Scrape the carrots, and cut into chunks.  Place the potatoes, and carrot chunks around the roast.  Based with Philipio Berio oil, and sprinkle with garlic powder, onion powder, and basil.

Bake in a preheated 350 degree oven.  Time reqired for medium cooked roast beef is 25 minutes per pound.  Cooked through is 30 minutes per pound.  I don't like my beef rare, because I know it's dangerous to eat it this way.

Let the roast settle for about ten minutes to let the juices settle before carving.

Tips:

An antipasto is perfect to serve before the roast beef meal.
Crusty Italian bread is also delicious with this if you'd like.

OVEN BARBECUED STEAKS

Good alternative when you're looking for something delicious and different to serve your family or friends.  Cheaper cut of beef is good to use for this dish.

Ingredients:

  • 3 lbs. steak, cut 3/4 of an inch thick
  • 2 tblspns. Olive Oil
  • 1/2 cup chopped onions
  • 3/4 cup catsup
  • 1/2 cup vinegar
  • 3/4 cup water 1 tblspn. brown sugar
  • 1 tbs. prepared mustard
  • 1 tblspn. Worcestshire sauce
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper

Preparation:

Heat oven to 350 degrees (moderate).  Cut steak into 10 equal portions.  Pour oil into skillet. Brown each piece of steak on both sides. Transfer steaks to a roasting pan. Add onions to oil in skillet and brown lightly. Add rest of ingredients to make a barbecue sauce, and simmer for 5 minutes.  Pour sauce over steaks in pay. Cover, and bake for 2 hours, or until meat is fork tender. Makes about 10 servings.

Tips:

Mashed potatoes is delicious to serve with this. A nice salad would go with this in addition to the potatoes.

POT ROAST W/ROOT VEGETABLES/WHITE WINE

A lovely, comforting family meal for a cold winter's night.

Ingredients:

  • Olive oil to cover bottom of a dutch oven
  • 1 1/2 to 2 pnds. of rump roast or beef chuck fillet roast
  • 2 Carrots
  • 2 parsnips, peeled and cut into bite-sized pieces
  • 2 purple top turnips
  • 1 tsp. thyme
  • 1 tsp. marjoram
  • 7 – 8 ounces fresh mushrooms, washed and sliced
  • 1 cup white wine
  • 1 1/2 cups beef or chicken broth
  • 1 handful washed, chopped Italian parsley
  • Salt and Pepper to taste

Preparation:

Preheat oven to 300 degrees.  in a heavy-bottomed dutch oven, heat oil, add parsley, marjoram, thyme, and simmer for about 2 minutes, then brown the pot roast, gently, then set aside.  Add cut up vegetables to dutch oven, then replace pot roast on top of vegetables.  Pour broth, and then the white wine over the meat and root vegetables.

Cover dutch oven, place in oven, and bake for about 4 hours.  About 1 half hour before the end of cooking time, put in the sliced mushrooms around the roast and on top of the root vegetables.  Finish cooking, and serve.

EASY CROCK POT BEEF RIBS

The aroma from this crock pot meal when you walk in the door after a long day at work will make you impatient for the family to be assembled so that dinner can begin.  Just prepare a salad, or some steamed veggies to go with the beef, and you'll have a quick and easy meal your family will love.

Ingredients:

  • Beef ribs, two – three per person
  • thyme
  • marjoram
  • garlic
  • About a 1/2 cup of water for the crock pot

Preparation:

  1. Wash the beef ribs, and generously sprinkle with garlic, thyme and marjoram. 
  2. Put a rack in the crockpot so any grease will flow to the bottom and not allow the meat to soak in it. 
  3. Add the seasoned ribs, and turn dial to high, allowing it to cook for 8 hours.  If you're home, and want to start the meal later, set the dial to low and cook for 6 hours.
This meal couldn't be easier!

Tips:

If you like to have mashed potatoes with the meal, peel and cut the potatoes into thick slices, and put in a bowl with enough cold water to cover, and place in the refridgerator.  This will save time at the end of the day when you're tired.  When you get home you can put them into a pot to cook before mashing.

Fix a salad with your favorite fresh veggies if you'd like. You could also steam some Bird's Eye carrots, broccoli, and cauliflower, if you'd like. Or, how about sauteing some cabbage.  It's easy, and you'll find the recipe within SIDE DISHES.

If you want to save even more time for when you come home that night; you can place the ribs in a dish, and add seasonings. Then leave it in the refridgerator to marinate overnight.
