Sous Vide Chicken Breast with Sorrel Sauce

Today I'm going to show you how to make the tenderest chicken you've ever had. Yes, of course it's sous vide. So chicken can be a bit of a problem because using conventional cooking methods it's nearly always dry and stringy - it's very hard to get a perfectly juicy chicken breast.

And it's not helped by government health authorities saying that it must be cooked to a certain temperature. Because that temperature guarantees - well, it kills the bugs, but - it also dries out the chicken.

But with sous vide you can still kill the bugs by cooking to a lower temperature but for a longer time - it has exactly the same effect. So it's perfectly safe and - it's amazing! I'm also going to show you how to make a nice little sorrel sauce to go with it. So, let's do it!

Before you start, you want to pre-heat your water bath to 66 degrees Celcius. Some recipes say as low as 60. I've done that but it does turn out a bit pinker than I actually like it, so 66 is the target.

So I've got a couple of chicken breasts, with the skin on, and some salt and some pepper, so we just season them liberally. For some recipes you can also put aromatics - I could actually put a sorrel leaf in with those, but I think for this particular herb it's very strong and it might be overpowering, so I'm not going to do that.

So now I need to pop these in a zip-lock bag or vacuum pouch if you use that method. But the cheapskate method works perfectly well, so that's what I'm doing.

And then we'll pop this in the water bath. BEEP BEEP BEEP And it's an odd thing about the Anova Precision Cooker TM, is that it always beeps to say it's ready at about 2 of a degree below the temperature you've set. Ho hum, don't know. Anyway, it still works.

So we'll pop the chicken bag in, and make sure the air is getting pushed out, and zip it closed. And I'm going to leave that in there for an hour and a half. Some recipes say an hour, but, y'know, I've got other things to do. An hour and a half will be fine.

So the chicken is nearly ready - it can stay ready for a few hours in the sous vide machine, no problem. So I've got the ingredients for the sauce - I've got some chicken stock, home-made and wibbly wobbly, some double cream, heavy cream, a big knob of butter and some flour. And a couple of sorrel leaves from our garden.

Now, you might struggle, in fact you will struggle to find sorrel on sale in a supermarket or shop, unless it's highly specialised. We grow this in our garden and it's very hardy, very easy to grow and it's very tasty.

It has a very strong, kind of citrussy flavour that goes very well with fish and chicken. So before we start making the sauce we need to chop the sorrel into teeny weeny bits, and the easiest way to do this is roll them up like a cigar, and then just cut them.

And then cut them again the other way, and voila, tiny bits of sorrel. Now to make the sauce, which is going to be your basic classic white sauce, we melt the butter over medium heat, and then we stir in some flour to make a roux.

And when that's nicely mixed up, mixed together, we add the stock. And we can also pop the sorrel in. Stir that together and let it cook for about 5 minutes. And then we'll add some cream - that much! Stir it in and have a taste.

That is lovely. Right, so let's finish off the chicken and then - we can have our dinner. So here's the chicken, looking totally unappetising, as sous vide stuff usually does. So we'll take it out of the bag, and there's some juices there, I'll put those in the sauce.

And now what we need to do is just sear it, quite quickly, in some very hot oil. Now this is going to get pretty smoky so you want to get your extractor on, windows and doors open and smoke alarms turned off, if you can. Right, the oil is hot, so let's slam in the chicken.

You need to keep turning it, get all surfaces seared - don't forget the ends. OK, that's looking pretty good, so let's serve it up. So there it is, the wonderful sous vide chicken. And the lovely sauce to go with it.

Southern Fried Chicken Recipe

Okay, fried foods aren’t the healthiest thing to eat, but they do taste good. Fried chicken is one of those meals that it’s easy to run down to KFC or Popeyes and grab a bucket, but it’s so much better homemade. This is a great southern fried chicken recipe that you and your family will appreciate. For this recipe you will need a deep fryer.


  • 1/2 gallon peanut oil (only use peanut oil)
  • 2 1/2 – 3 pounds of chicken (chicken legs and chicken breast with the bone still in, must be thawed)
  • 4 large eggs (beaten)
  • 3 cups flour (self rising flour)
  • salt (to taste)
  • pepper (to taste)
  • paprika (to taste)


  1. Pour peanut oil into deep fryer and heat to 350°.
  2. Wash the chicken and dry them off with paper towel.
  3. Take a large bowl and add in the flour, paprika, salt, and pepper. Mix it thoroughly.
  4. Take the chicken pieces and coat them with the seasoning you made in the bowl.
  5. After you have coated each piece, dip them in the egg mixture and then re-coat with the seasoning.
  6. Place the chicken in the deep fryer for 35-40 minutes. During this time you should only turn the chicken once.

Chicken Tater Tot Casserole Recipe

This is a chicken tater tot casserole recipe that is simply delicious. Casseroles tend to be easy dishes to make and they are real easy to put your own personal twist on them. If you would rather have it with hashbrowns, you can subsitute it for the tater tots. You won’t leave the dinner table hungry after you try this chicken tater tot casserole!


  • 2 pounds chicken (ground)
  • 1 medium white onion (chopped)
  • 1 can (10 3/4 ounces) cream of chicken soup
  • 1/4 teaspoon pepper
  • 2 cups frozen mixed vegetables
  • 1 pound of frozen tater tots
  • 1/2 cup water


  1. Preheat the oven to 375°.
  2. Over medium heat, in a non-stick skillet, brown the onion and chicken until the ground chicken is no longer pink.
  3. Add the cream of chicken soup, water, and pepper and cook until it starts to come to a boil.
  4. Add and stir in the mix frozen vegetables until the vegetables become warm.
  5. Take a 2 quart casserole dish and pour in the contents of the skillet.
  6. Start layering the tater tots on top of the casserole. Just make one layer of tater tots.
  7. Place the casserole dish in the oven and bake for 40 minutes or until the tater tots get crispy and the casserole begins to bubble.

Easy Chicken Salad Recipe

  • 1 1/2 pounds of boneless, skinless chicken breast
  • 1 cup cherry tomatoes (halved)
  • 8 cups mixed greens
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/3 cup avocado (peeled and diced)
  • 2 tablespoons green onion (sliced)
  • 2 tablespoons blue cheese (crumbled)
  • 2 tablespoons of bacon bits
  • 1/3 cup Italian dressing

  1. Get a large non-stick skillet.
  2. Coat skillet with cooking spray.
  3. Set stove to medium heat and heat the skillet.
  4. Spinkle chicken with salt and pepper on both sides and then add chick to the pan.
  5. Cook each side of the chicken pieces for 5 minutes or until done.
  6. When the chicken is done, cut the chicken into 1/2 inch slices.
  7. Take a large bowl and put the onion, avocado, greens, and tomatoes in it.

Classic Chicken Noodle Soup Recipe

If you haven’t been feeling well, nothing makes you feel better like a bowl of chicken noodle soup. Even if you are feeling well, fall and winter are around the corner and soup can hit the spot to warm you up. This is a pretty basic classic chicken noodle soup recipe that you are should enjoy!


  • 3 pounds of chicken breast (skinless, cut into small pieces)
  • 1/2 cup white onion (chopped)
  • 2 carrots (peeled and chopped into small pieces)
  • 2 celery stalks (chopped into small pieces)
  • 16 cups of canned chicken broth (low-salt)
  • 1/4 stick butter (about 2 tablespoons)
  • 1 cup mushrooms (sliced)
  • 1/2 cup parsley (chopped)
  • 1 tablespoon lemon juice
  • 8 ounces of dried egg noodles (wide noodles)


  1. Put the chicken and chicken broth in a large pot.
  2. Bring contents to a boil.
  3. Reduce the heat down to a simmer and partially cover the pot until the chicken is cooked thoroughly. This should take about 20 minutes.
  4. Since we are using chicken breast there should be no fat on top of the broth. If there is, simply spoon it off.
  5. Add carrots, celery, and onions. Let the vegetables simmer until they soften. This should take about 8 minutes.
  6. In a large skillet using medium heat, melt 1/4 stick of butter (2 tablespoons). Add the mushrooms in the skillet and saute them until they brown. This should take roughly 5 minutes. In the pot stir in the lemon juice.
  7. Add the mushrooms from the skillet to the pot. Stir in the parsely and then the dried egg noodles.
  8. Let the pot simmer until the noodles are tender. This shoud take about 5 minutes. With salt and pepper, season the soup to taste.

Chicken Stew Recipe with Carrots and Potatoes

I have a great chicken stew recipe for you stew lovers. Fall is around the corner and winter won’t be too far behind. Nothing is better than a nice hot bowl of chicken stew!


  • 1 onion, chopped
  • 4 large potatoes (chopped)
  • ½ teaspoon salt
  • 3 tablespoons of tomato paste
  • ½ teaspoon ground black pepper (to taste)
  • ¼ teaspoon garlic powder (to taste)
  • ½ cup water
  • 4 skinless, boneless chicken breast halves, in small pieces
  • ¼ teaspoon ground turmeric
  1. You will need a big pot. Place the onions, carrots, potatoes, and chicken inside.
  2. Add the water.
  3. Dissolve the tomato paste in the water.
  4. Add the salt and tumeric as well as pepper and garlic powder (to taste).
  5. Set stove to a low to medium heat and let it simmer for an hour to an hour and a half.

Lemon Chicken Meatballs With Cauliflower

I know, I know, a long list of ingredients can sometimes looks intimidating to make the lemon chicken meatballs is a lot of work and time consuming I admit,
but it is very easy to make  and even beginners can make wonders with this recipe and get loads of compliments.

It is so tasty and a great way to feed kids with vegetables (if they are from the "no veggies" kind of kids)

I love to serve the lemon chicken meatballs in 2 ways,
one is just after they are coming out of the oil, when they are very crispy from the outside and soft from the inside with the great lemon and cauliflower flavor, and dip them in a bowl of tehina seasoned with more lemon and mint - gorgeous!

And the other way is after I fry the meatballs, I cook them with pickled lemon and water and they get so soft, kids just love them.

The other day after working for two hours in the kitchen and preparing something like 50-60 meatballs my sister and her kid's dropped by, in no more than 15 minutes the lemon chicken meatballs was all gone (and after my nephew told me that I make the best meatballs ever it was all worth it!).

Enough with the chatter, Let's start cooking!

  • 1  1/2 cup chopped parsley
  • 1/2 cup chopped coriander
  • 1  2 eggs
  • 1  1/2 cup bread crumbs
  • 1  1 small cauliflower
  • 1  500 gr minced boneless chicken thigh or breast (Usually, when I buy a whole chicken and cut it my self, I take the chicken breast out and mince it in the food processor)
  • 1  Juice from 2 whole lemons Finely grated zest and juice of 2 large lemons
  • 1  2 garlic cloves.crushed
  • 1  1 small white onion finely chopped
  • 1  Salt and freshly ground black pepper
  • 1  Vegetable oil
  • 1  1/4 tsp ground nutmeg
  • 0  4  leaves of sage - chopped

For the sauce:

  • 1 Tablespoon pickled lemon/juice from 2 lemons

How to

1. Cook the cauliflower until it's tender but not too soft

2. Drain the water and smash the cauliflower, set aside to cool.

3. Place the mince, lemons zest, lemons juice, breadcrumbs, mashed cauliflower, chopped Coriander ,chopped parsley, ground nutmeg, chopped sage, the eggs and chopped onion into a Bowl and mix well, let it chill in the refrigerator for 2 hours.

4. Form into medium balls and cover with breadcrumbs. lemon chicken meatballs covered  with breadcrumbs

Place a couple of tablespoons of oil into a non-stick frying pan and fry the meatballs until light brown. frying the lemon chicken meatballs.

Now, You can eat them crispy with tehina, lots of lemon and mint (or without) lemon chicken meatballs with cauliflower or You can make a sauce:

Bring to a boil 2 cups of water; add 2 tbs of pickled lemon (or juice from 1 lemon). Pickled lemon is very very salty so don’t add more salt, but if you are making the sauce from lemon juice you should add salt and pepper.

Add the meatballs and gently cook for 20 minutes until the meatballs will absorbed all the sauce.
