Simple Chicken Curry Recipe - Whenever I want to eat a real chicken curry, I go to a good restaurant were I know they will use the best spices to prepare a real authentic chicken curry recipe. When I am at home, well being as lazy as I am, i stick to this chicken curry recipe were i usually use ready curry powder (I buy my spices at a store that prepare their own spices from scratch.

They are very fresh and fragrant and using fresh spices and herbs makes a huge different in any dish)

The taste is not as good as eating outside I am the first one to admit, but consider to the affords I put in preparation (Which is no effort at all) the taste is great!

This chicken curry recipe is also known in our family as "curry in a hurry". Usually I don’t peel the tomatoes when I am cooking to my family and that is because they never complained (when they will start complaining I will peel them, I promise).

But when I am inviting friend over I do take my time (extra 5 minutes) and make sure to peel them all. I have another really good authentic chicken curry recipe were i use many spices and the taste and smell is really similar to the one we eat at our favorite Indian restaurant but that i will leave to another day.

For now let's start with the quick and easy version

  • 3 tomatoes peeled and chopped
  • 1/2 a cup of Coriander - chopped
  • 2 white onions - chopped
  • 6 boneless chicken thighs - cut to medium pieces
  • 2 Tbs ginger - chopped
  • 3 garlic cloves - chopped
  • 3 Tbs indian Curry powder
  • 1 chili pepper
  • 1 can - coconut milk
  • Canola oil
  • Salt and pepper

How To

1. Start with frying the onion, the ginger and the garlic for 5 minutes frying an onion, frying ginger and garlic

2.  Add the chicken tights and fry them for another 5 minutes frying chicken tights

3.  Add the curry powder and mix it carefully. Add curry powder to the frying chicken tights.

4.  Add the chile paste

5.  Add the tomatoes.

6.  Season with salt and pepper. Add the salt and pepper

7.  Garnish with fresh chopped coriander

8.  Add the coconut milk

9.  Let it cooked for another 5 min chicken curry

10.  Serve it with a bowl of white rice chicken curry
